Friday on the Rocks – Pomegranate Martinis

Forgive the dust around here, we are knee deep in repairs and lightening speed house painting as we get ready to move back into our house next week. It’s been a bit manic and overwhelming, to say the least. After being gone for four years, opening up all the boxes from the storage unit will either be like Christmas, or a whole lot of “What the heck? Why did we keep this?”

Along with the storage unit, a few things had migrated to my parents’ basement, including a box of booze that we weren’t allowed to pack. (And hey, it keeps, right?) In it I found a bottle of vanilla vodka (what the hell was I making with that?), just opened bottle of Grey Goose Vodka, and a bottle of Absolute Citron. (We like our vodka, apparently.) There was also some wine which I’m thinking may or may not be drinkable.

We have always have a bottle of Absolute Citron in the freezer…at least until this move back. I even have a cute little knit cozy that you slip on the bottle so you don’t freeze your little fingers

Anywho, looking at that bottle of vodka reminded me of the last drink I likely made with it before we moved:

The Pomegranate Martini. Thank you, Rachel Ray and Oprah. Never mind the book clubs and the “EVOO” and the “garbage bowl”, THIS has been the greatest take-away for me. If you haven’t had it, you must!

  • 1 1/2 cups pomegranate juice
  • 2 ounces Absolute Citron vodka or white tequila
  • 1 ounce Cointreau liquor
  • Cup of ice
  • pomegranate seeds for garnish (optional)
Mix ingredients in a shaker and pour into chilled martini glasses. Put pomegranate fruit into glass as garnish. Serves two, if you feel like sharing.

It’s a holiday weekend. This is kind of a celebratory drink. In lieu of the pomegranate seeds, toss in some blueberries for color. Between the frosted martini glass, the deep red of the juice and the plump blueberries, you’d have a lovely red, white and blue drink for the weekend!!!
